Chicken Coconut Milk Curry

Ingredients

  • Chicken - 1 kg
  • Onion - 1 1/2 cups
  • (sliced)
  • Ginger(chopped) - 2 tbsp
  • Garlic(chopped) - 1/2 tbsp
  • Green chillies(slit) - 4 nos
  • Curry leaves - 2 - 3 sprigs
  • Potato(big) - 1 no
  • (boiled and cubed)
  • Lemon - 1 no
  • Coriander powder - 2 tsp
  • Red chilly powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Pepper powder - 1/2 tsp
  • Garam masala powder - 1/2 tsp
  • Aniseed(Perinjeerakam) powder - 1/2 tsp
  • Coconut milk - 2 cups
  • Oil - As reqd
  • Salt - As reqd


Method of Preparation

  • Marinate chicken with 1 tsp salt and 1 tsp lime juice and keep aside for 1/2 an hour.
  • Make a paste of coriander powder, chilly powder and turmeric powder. Keep aside.
  • Heat oil in hard bottomed vessel.
  • Add onion, ginger, garlic and green chilli and saute them till brown.
  • Add masala paste and stir fry for a minute.
  • Add chicken, stir and fry for 5 mins.
  • Add 1 1/2 cups of coconut milk, required salt and cook for 1/2 hour or till done.
  • When the chicken is half done, add the cubed and boiled potato.
  • Add rest of the coconut milk (1/2 cup), garam masala, pepper powder and curry leaves.
  • Heat it for a minute and the chicken curry is ready.
  • Dissolve 1 tbsp corn flour in 1/4 cup of water and add to chicken curry for a thickened gravy.
